Food-based nutrition

When the ingredient story matters as much as the nutrition panel

Food manufacturers can add nutrients to products in several ways. Conventional fortification remains an established and useful approach, but it is not the only option.

For brands developing organic, plant-based or carefully formulated foods, the origin of a nutrient may form an important part of the product proposition.

Bioreal Organic B12 Yeast Flakes combine the familiar savoury qualities of nutritional yeast with vitamin B12 produced through natural bacterial fermentation on certified organic raw materials.

This creates an opportunity to explore flavour, nutritional value, organic credentials and ingredient provenance through one food ingredient.

Organic yeast flakes containing vitamin B12 formed through fermentation, without artificial fortification with synthetic vitamin B12.

Important allergen information

The B12 yeast flakes contain yeast derived from wheat, and gluten is declared as an allergen. Do not describe this product as gluten-free.

Values are stated per 100 g of the ingredient. The nutritional contribution to a finished food depends on the quantity used and must be confirmed for the final formulation.

How the B12 is formed

Fermentation rather than conventional synthetic fortification

Vitamin B12 is naturally produced by particular microorganisms. Agrano uses selected natural, non-genetically modified microorganisms to produce vitamin B12 through fermentation on organic plant-based raw materials.

Organic pea protein, organic glucose and organic yeast extract support the fermentation process. These materials are largely metabolised by the microorganisms, although they remain listed in the ingredient declaration to meet applicable European labelling requirements.

The resulting organic fermentation product is incorporated into the yeast-flake production process. We confirm that the product is not artificially fortified with synthetic vitamin B12.

1

Organic fermentation inputs

Organic plant-based raw materials provide the fermentation medium.

2

Selected microorganisms

Natural, non-genetically modified microorganisms form vitamin B12 during fermentation.

3

Finished organic yeast flakes

The fermentation product is combined with the organic yeast-flake ingredients to produce Bioreal Organic B12 Yeast Flakes.

The vitamin B12 is formed by selected natural bacteria during fermentation. It is not produced by the yeast organism itself.

Applications

Potential applications in nutritional food development

The B12 yeast flakes may be considered wherever a savoury organic ingredient and a meaningful B12 contribution could complement the finished product. Suitability depends on flavour, inclusion rate, processing and the intended nutritional proposition.

Potential channels range from retail and foodservice nutritional yeast products through to formulated foods developed by manufacturers.

Potential applications in nutritional food development

Nutritional yeast products

Retail or foodservice yeast-flake products designed for use as a savoury ingredient or topping.

Plant-based cheese alternatives

Cheese-style sauces, spreads, grated alternatives and other savoury dairy-free formulations.

Savoury nutritional foods

Soups, sauces, meal bases, spreads and dry mixes positioned around plant-based or organic nutrition.

Plant-based ready meals

Prepared meals in which savoury flavour and vitamin B12 may both be relevant.

Seasonings and dry blends

Dry savoury products where the flake format, particle size and flavour are compatible with the formulation.

Private-label product ranges

Commercially developed nutritional yeast products and other eligible formats, subject to confirmed capabilities, volumes and packaging requirements.

Specialist plant-based foods

Products developed for vegan, vegetarian and flexitarian audiences where B12 has particular nutritional relevance.

Foodservice applications

Commercial culinary products and menu applications, provided that any nutritional communication is based on the final prepared food.

From ingredient to finished product

The ingredient value does not automatically become the product claim

The Bioreal specification confirms 45 μg of vitamin B12 per 100 g of yeast flakes. This is equivalent to approximately 2.25 μg in 5 g of the ingredient before accounting for manufacturing, storage or preparation conditions.

Agrano's European product information expresses the B12 contribution against the European adult reference value. Australian reference values, serving definitions and claim requirements differ, so finished-product claims and serving information must be assessed under the requirements of the intended market.

Before making a vitamin B12 claim

  • Determine the ingredient inclusion rate
  • Calculate the expected B12 contribution per finished serving
  • Consider processing and storage stability
  • Analyse the final product where required
  • Establish the appropriate Australian serving size
  • Check the conditions for nutrition-content and health claims
  • Confirm that the wording and presentation comply with FSANZ requirements

MH Bioreal can provide available ingredient documentation, but responsibility for finished-product compliance and claims remains with the manufacturer.

Understanding the difference

Three different nutritional yeast propositions

Bioreal Organic B12 Yeast Flakes

  • Certified organic ingredient
  • 45 μg vitamin B12 per 100 g
  • No artificial fortification with synthetic vitamin B12
  • B12 formed through fermentation using selected microorganisms
  • Savoury yeast-flake format
  • Contains wheat-derived yeast and declared gluten

Conventionally fortified nutritional yeast

  • Vitamin B12 is added through fortification
  • Nutrient levels vary by product
  • May provide a substantial amount of B12
  • Organic status and ingredient requirements depend on the particular product and certification system

Standard organic yeast flakes

  • Organic yeast ingredient
  • May provide flavour and other naturally present nutrients
  • Should not be assumed to contain a meaningful amount of vitamin B12
  • Specifications vary by product

These are general product categories. Individual competitor products must be assessed from their own specifications and labels.

Product positioning

A useful intersection of organic, plant-based and nutritional development

Bioreal Organic B12 Yeast Flakes may be relevant to manufacturers developing foods where several considerations need to work together:

  • certified organic ingredient selection
  • vegan or vegetarian suitability
  • savoury flavour contribution
  • vitamin B12 content
  • food-based product positioning
  • transparent ingredient provenance
  • commercial ingredient supply
  • private-label possibilities

The value lies in the combination. The ingredient can contribute flavour and nutritional value while giving manufacturers a distinctive fermentation-based B12 story. This ingredient is not an alternative to medical advice, prescribed supplementation or an appropriately planned diet.

Important considerations

Claims must be based on the finished product

  • The B12 ingredient contains wheat-derived yeast and declares gluten as an allergen.
  • Do not describe the product as gluten-free.
  • Do not assume all Bioreal products share the same allergen profile.
  • The 45 μg B12 figure applies to 100 g of the ingredient.
  • Finished-product values depend on inclusion rate and processing.
  • Australian nutrition-content and health claims must meet applicable FSANZ conditions.
  • European NRV percentages should not automatically be presented as Australian RDI percentages.
  • Vegan certification should only be displayed for products and formats covered by the applicable certification.
  • Organic ingredient status does not automatically certify the finished product.
  • Final labels, claims and nutritional panels remain the responsibility of the finished-product manufacturer.
