Plant-Based Food
Organic yeast flakes, powders and extracts for building savoury flavour, supporting nutritional value and developing differentiated plant-based foods.
Discuss your application
Plant-based formulation
Plant-based products need more than substitution
Removing animal-derived ingredients can change flavour, aroma, richness, texture and nutritional composition at the same time.
The challenge is not simply to replace meat, dairy or cheese with a single alternative ingredient. Successful plant-based development requires a complete formulation in which each ingredient has a clearly defined role.
Organic yeast ingredients may help manufacturers build savoury depth, introduce different flavour characteristics and contribute nutritional value. The appropriate format depends on the finished product, its processing method and the experience the manufacturer wants to create.
The question is not whether yeast belongs in a plant-based product. It is which yeast ingredient is appropriate for the formulation.
The formulation challenge
Rebuilding depth, balance and product identity
Savoury depth
Removing cheese, meat stocks or other animal-derived ingredients can leave a formulation tasting thin or incomplete. Selected yeast ingredients can contribute savoury character and help build a more rounded flavour profile.
Product-specific flavour
A cheese alternative, meat alternative, soup and seasoning do not require the same yeast profile. Mild flakes, aromatic powders, autolysates and concentrated extracts perform different roles.
Nutritional composition
Plant-based products developed for vegan and vegetarian consumers may need deliberate consideration of nutrients such as vitamin B12. Nutritional contribution must be calculated for the finished product.
Organic integrity
Manufacturers developing certified organic products need ingredients and documentation that align with the intended certification and formulation requirements.
Ingredient options
Different yeast formats for different applications
Organic yeast flakes
Flaked inactive yeast ingredients with flavour profiles ranging from mild and grain-like to stronger savoury varieties. Potential applications include nutritional yeast products, toppings, dry blends, spreads and plant-based foods.
Organic yeast powders
Fine inactive yeast ingredients suited to applications where a powder format is preferred. Agrano identifies applications including spreads, meat alternatives and vegan cheese products.
Organic yeast extracts and pastes
More concentrated savoury ingredients available in different profiles and formats. Potential applications include sauces, stocks, seasonings, prepared foods and plant-based formulations requiring greater flavour intensity.
Organic B12 yeast flakes
Organic yeast flakes containing 45 μg of vitamin B12 per 100 g. The B12 is formed through fermentation using selected natural, non-genetically modified microorganisms grown on organic plant-based raw materials.
Ingredient suitability, flavour intensity, allergen status and inclusion rate vary by product. Manufacturers should review the specification for the individual ingredient under consideration.
Plant-based cheese
Creating savoury character without dairy ingredients
Yeast flakes and powders are widely associated with plant-based cheese-style foods because they can contribute savoury, fermented and bread-like characteristics.
Within the Bioreal range, different yeast formats may be considered for:
- grated cheese-style products
- cheese-style sauces
- savoury spreads
- dips
- fillings
- powdered sauce mixes
- bakery toppings
- dairy-free meal components
The appropriate ingredient depends on the desired flavour, finished texture, processing conditions and whether the yeast should remain visually identifiable.
Yeast ingredients contribute to the overall formulation but should not be presented as a complete replacement for the functional properties of dairy protein or cheese.

Meat alternatives
Building flavour around plant proteins
Plant proteins can introduce their own flavours while lacking some of the savoury depth traditionally associated with meat-based products.
Bioreal organic yeast powders, flakes, autolysates and extracts may be evaluated as part of the flavour system for plant-based meat alternatives.
Potential applications include:
- burgers and patties
- sausages
- mince-style products
- savoury fillings
- meat-free ready meals
- marinades and coatings
- dry seasoning systems
- sauces accompanying plant-based proteins
Final performance depends on the complete formulation, including the selected plant protein, fats, seasonings, processing method and yeast ingredient. Product trials are essential.

Beyond meat and cheese alternatives
A wider role in plant-based food development
Organic yeast ingredients can also support the wider plant-based basket, from spreads, soups and snacks through to bakery products and prepared meals.
Ready meals such as curries, pasta dishes, grain bowls and vegetable-based dishes are among the applications where additional savoury depth may be desirable.

Savoury spreads and dips
Vegetable, bean, nut and seed-based spreads where additional savoury depth may be desirable.
Soups, sauces and gravies
Plant-based formulations requiring a fuller flavour profile without animal-derived stocks.
Ready meals
Curries, pasta dishes, grain bowls, vegetable meals and other prepared foods.
Savoury snacks
Crackers, extruded snacks, popcorn, vegetable snacks and seasoned products.
Dry mixes and meal bases
Soup mixes, sauce powders, seasoning sachets and plant-based meal components.
Bakery applications
Savoury fillings, toppings, breads and baked products developed without animal-derived ingredients.
Nutritional yeast products
Retail, foodservice and private-label products in flake or suitable powder formats.
Organic product ranges
Plant-based products developed with certified organic ingredient requirements.
Vitamin B12 opportunity
A relevant nutrient for plant-based audiences
Vitamin B12 requires particular consideration in vegan diets because reliable dietary sources are predominantly associated with animal-derived foods, fortified foods and supplements.
Bioreal Organic B12 Yeast Flakes provide 45 μg of vitamin B12 per 100 g of ingredient. We confirm that the B12 is formed through fermentation of organic plant-based raw materials using selected natural, non-genetically modified microorganisms.
The product is not artificially fortified with synthetic vitamin B12.
For manufacturers, this creates an opportunity to explore a savoury organic food ingredient that can also contribute vitamin B12.
The ability to make a vitamin B12 claim depends on the amount used, the finished serving, processing and storage conditions, final nutritional analysis and applicable Australian requirements. Ingredient-level values do not automatically support a finished-product claim.
Product selection
Check the specification, not just the product category
The Bioreal range includes multiple yeast ingredients with different compositions, formats and allergen declarations.
- The B12 yeast flakes contain yeast derived from wheat, and gluten is declared as an allergen.
- Do not describe the B12 yeast flakes as gluten-free.
- Some other Bioreal products have different formulations or allergen profiles.
- Do not apply one product's specifications or claims across the entire range.
- Organic ingredient status does not automatically certify the finished product.
- Vegan suitability and certification should be confirmed for the specific product and intended market.
- Processing compatibility and inclusion rates must be evaluated in the manufacturer's formulation.
- Finished-product labels and claims remain the manufacturer's responsibility.

Organic product development
Organic yeast backed by specialist experience
Agrano's work in organic yeast began in 1983. The first organic yeast production followed in 1995, and Agrano was established in Germany in 1996.
The Bioreal range developed from this specialist experience and now includes organic active yeast, inactive yeast flakes, yeast powders, yeast autolysates and yeast extracts.
For plant-based manufacturers, this provides access to several organic yeast formats rather than a single generic nutritional yeast product.
MH Bioreal connects Australian manufacturers with the Agrano range and can provide available specifications and product information for commercial evaluation.
