Ingredient roles

Different yeast ingredients perform different jobs

The Bioreal range includes several forms of inactive organic yeast ingredients. Each has its own composition, flavour profile, physical characteristics and potential role within a food formulation.

Selecting an ingredient should begin with the finished product and the function required. A yeast extract selected for savoury flavour development is not automatically interchangeable with a yeast powder, yeast flake or B12-containing yeast ingredient.

The correct ingredient depends on the finished product. Yeast extracts, powders, flakes and B12 yeast flakes should not be treated as interchangeable.

Organic yeast extracts

Water-soluble food-grade organic yeast extracts available in selected powder and paste formats. Agrano identifies applications across food manufacturing, including soups and sauces, with the appropriate product depending on the required flavour profile, salt contribution, processing conditions and finished application.

Organic yeast powders

Inactive organic yeast powders with different sensory profiles. They may be evaluated for flavour, texture or nutritional contribution depending on the selected product and formulation.

Organic yeast flakes

Inactive organic yeast flakes for savoury and nutritional applications. Different flake products are available, including products developed for uses such as seasonings, spreads and plant-based formulations.

Organic B12 yeast flakes

Inactive organic yeast flakes containing vitamin B12 through Agrano's specialised production and fermentation process, without conventional fortification of the finished flakes. Relevant to selected organic, plant-based and nutritional food formulations.

Commercial use

Supplied as formulation ingredients for professional food manufacturers, subject to product selection, trials and finished-product assessment.

Composition, sensory profile, nutritional values, salt content, allergens, physical format, packaging, storage and current certification vary by product. These details must be taken from the applicable Agrano specification.

Savoury formulation

Building flavour with yeast ingredients

Yeast extracts, powders and flakes can contribute savoury character and depth to food formulations. Agrano identifies applications across categories including soups, sauces, seasonings, spreads and instant or prepared meals.

The result depends on the particular ingredient, dosage, other ingredients, processing method and intended flavour profile.

Potential application areas include:

  • soups, stocks and broth-style products
  • sauces and gravies
  • seasoning blends
  • savoury spreads and dips
  • prepared meals
  • snack seasonings
  • dry mixes and meal bases
  • plant-based savoury products
  • bakery and savoury fillings
  • foodservice and catering formulations

Listing an application does not confirm that every Bioreal ingredient is suitable for it. Product selection and dosage should be established through specification review, formulation work and production trials.

Salt and formulation

Salt contribution must be assessed product by product

Yeast extracts within the Bioreal range do not all have the same salt profile.

Some products include added salt, while other products have a substantially different composition. This makes the applicable product specification essential when sodium content is an important formulation consideration.

A yeast ingredient may be evaluated as part of a broader flavour strategy where a manufacturer is reviewing salt use, but no finished-product sodium reduction should be assumed or guaranteed.

Salt-reduction potential belongs to the finished formulation, not automatically to the yeast ingredient.

Product selection

Choose the yeast extract or yeast ingredient according to its documented composition and intended application.

Total formulation

Assess the ingredient's salt contribution together with every other source of sodium in the finished product.

Finished-product validation

Any reduced-sodium or nutrition claim must be substantiated against the final formulation and applicable Australian requirements.

Nutritional formulation

Beyond flavour development

Not every Bioreal ingredient is selected solely for flavour.

Inactive yeast powders and flakes may also contribute protein and other nutrients, depending on the selected product. Bioreal Organic B12 Yeast Flakes provide a distinct option for formulations where fermentation-derived vitamin B12, organic positioning and plant-based suitability are relevant.

Potential areas for evaluation include:

  • plant-based foods
  • nutritional food products
  • savoury nutritional formulations
  • vegan and vegetarian product ranges
  • organic product development
  • specialist health-food products
  • private-label food ranges

Ingredient-level nutritional values do not automatically substantiate claims for a finished food. Serving size, inclusion rate, processing, final composition and Australian food-labelling requirements must be assessed.
